Servings 1 Large Batch

  • 3 c. Gluten-free Rolled Oats
  • 1 c. Sliced Almonds
  • 1 c. Pumpkin Seeds
  • 1 c. Shredded Coconut Flakes
  • 1 c. Golden Raisins
  • 1/4 c. Chia Seeds
  • 1/3 c. Maple Syrup
  • 1 tsp. Pink Himalayan Salt
  • 1 Banana Mashed
  • 1 tbsp. Coconut Oil

  • Preheat oven to 350 degrees.
  • Put the rolled oats, almonds, pumpkin seeds, coconut flakes, golden raisins, chia seeds, salt and maple syrup (every ingredient except the banana and coconut oil) into a large mixing bowl and mix well.
  • In a small saucepan, heat a mashed banana and coconut oil over medium heat until melted down and bubbling.
  • Transfer the banana/coconut oil mixture into a blender and blend well then pour it over the mixed granola.
  • Transfer granola to 2 baking sheets (if it's too much on one it won't bake evebly) bake for 50 minutes, taking it out and stirring granola every 10-15 minutes so it doesn't bake unevenly.

*Store in tupperware or mason jars and keep in a cool, dry place (i.e. pantry). :)
