
The easiest healthy oatmeal raisin cookies you’ll ever make! Naturally sweetened, gluten-free, and vegan. Chewy raisins and the perfect cookie texture.
Healthy Oatmeal Raisin Cookies
Oatmeal raisin cookies are one of my favorites! I was inspired to make these from my love of the oatmeal cookies at one of my favorite delis in La Jolla, California (The Cheese Shop). In my version, I used all natural, whole ingredients as I do with all of the recipes on my blog and added in raisins (I like to buy the Jumbo Raisins at Trader Joe’s, but you can use any kind in this recipe) and pumpkin seeds (optional) for added texture.

The ingredients for these oatmeal raisin cookies are all gluten-free, vegan, and refined sugar-free. They are made with mainly gluten-free oats, but also have a little bit of coconut flour. To hold it all together, I use a flax egg (1 tbsp. flax seed + 2.5 tbsp. water that sits for 5 minutes), but you can use a normal egg for a non-vegan version of this recipe. I also use coconut oil and maple syrup for it’s stickiness, but you can also use date syrup. A little bit of coconut sugar, vanilla, and cinnamon give it the perfect flavor!
Be mindful that the dough isn’t a typical cookie dough texture, but more like an oatmeal bake. When you are making the cookie shapes on your cookie pan, be sure to press the oats in firmly with your hand or the back of a spoon so they don’t break apart after baking. Once they are done baking, let them cool on the pan for 5-10 minutes before removing.

Healthy Oatmeal Raisin Cookies
Ingredients
- 1 1/2 c. Rolled Oats
- 1/4 c. Oat Milk
- 1/4 c. Coconut Oil melted
- 1/4 c. Raisins
- 1/4 c. Maple Syrup
- 2 tbsp. Coconut Flour
- 2 tbsp. Coconut Sugar
- 1 tsp. Cinnamon Powder
- 1/2 tsp. Vanilla
- Pinch Pink Himalayan Salt
For the flax egg:
- 1 tbsp. Flax seed
- 2.5 tbsp. Water
Instructions
Recipe:
- Preheat oven to 350 degrees.
- Combine the ingredients for the flax egg and let sit for 5 minutes to thicken.
- Mix all other ingredients in a large bowl until evenly mixed and then add in flax egg.
- Press circles of dough 1/2" high onto a baking sheet greased with coconut oil. Make sure to pack in dough tight.
- Bake for 15 minutes.
- Remove and let cool! This step is important so the cookies do not break.
