Vegan, dairy-free Mint Chocolate Chip “Nice” Cream (aka healthy, plant-based ice cream) made with bananas, coconut milk, stevia, and fresh mint leaves!
The “nice” cream revolution is upon us, y’all and I am all about it! This Mint Chocolate Chip “Nice” Cream tastes almost identical to regular ice cream. I could eat this every day! It is the perfect treat and insane that you can yield such good results with healthy alternative ingredients!
If you haven’t heard of “nice” cream, it’s essentially a healthier version of ice cream made from usually a frozen banana and coconut milk base, or any other type of nut milk and frozen fruit.
The base of this recipe is indeed light coconut milk and frozen bananas. Other than that, there’s literally 4 ingredients! Compare that to some of the ice cream brands you find at the store and I’d bet you’d be surprised!
The other ingredients in this nice cream are: fresh mint leaves, spirulina powder, vegan chocolate chips, and stevia. I got the fresh mint and stevia from Trader Joes and the spirulina powder and Lily’s chocolate chips from Whole Foods, but you can also get it from Amazon relatively cheap!
Although spirulina can be more of an expensive ingredient, it’s a great investment for your health and can be used in tons of other recipes and ways! You can choose to forgo it for this recipe, but it won’t have the iconic mint green color. If you don’t want to buy Vegan Chocolate chips, you can also use cacao nibs or use them as a topping!
Nice Cream can be enjoyed instantly from the blender, but if you want a more “scoopable” consistency then you should freeze it…be patient, good things come for those who wait 😉

Mint Chocolate Chip "Nice" Cream
- 1/2 can Light Coconut Milk
- 1 1/2 Frozen Bananas Peeled
- 1/4 tsp. Spirulina Powder
- 1 handful Fresh Mint
- 4 Drops Stevia Sweetner
- Handful Vegan Chocolate Chips I use Lily's
- In a blender, blend all ingredients on high.
- Pour into a loaf pan and freeze for 2 hours or serve instantly. Top with cacao nibs if desired 🙂
