Lychee ceviche is the perfect balance between sweet and savory. A great plant-based alternative to classic ceviche with all the same amazing flavors and textures!


Are you ready for a delicious, plant-based lychee ceviche?! Lychees are an amazing little fruit, but not extremely common. If you have never seen one, they come in a hard red/purple/brown shell. The actual flesh of the fruit is an opaque off-white color with a dark seed in the center. Lychee is an Asian fruit and is used in mainly Asian cuisines. Perhaps you have tried a lychee flavored dessert or martini?

If you are familiar with them, they are delightful and have a great sweet taste! They burst in your mouth almost like boba bubbles!! After seeing lychee at my Central Market, I decided to try some new and creative lychee recipes and ceviche came to mind because of the fruit’s light, semi-translucent color- it makes it look like almost like raw fish!

This lychee ceviche recipe makes a wonderful plant-based/vegan alternative to ceviche and also happens to be gluten-free! It is healthy and makes a great party appetizer or side dish.

Lychee isn’t always available year round, but if it isn’t at your local grocery store, try checking a local Asian grocery store if possible!

This recipe also features classic ceviche elements such as avocado, tomato, red onion, lime and cilanto. If desired, you can add fresh jalapeno, Himalayan sea salt, and/or cracked black pepper. This recipe pairs amazingly with any type of chip or cracker- I used Central Market sweet potato tortilla chips and it was a great pairing!

Ingredients

  • 6 Lychee Fruits Peeled
  • 1/6 Red Onion
  • 1 Small Mango Peeled and sliced
  • 1 Medium Red Tomato
  • 1/4 Avocado
  • 1 handful Fresh Cilantro
  • 2 Limes Squeezed
  • 2 tbsp. Olive Oil

Instructions

Recipe:

  • Peel lychee fruits and chop up flesh. Add to a bowl with chopped up tomatoes, red onion, sliced mango, and sliced avocado.
  • Drizzle with olive oil and lime juice.
  • Top with fresh cilantro and a little Himalyan salt if desired.

Notes

Best served chilled or room temp.
