Healthy and easy cinnamon sugar delicata squash “fries” with maple coconut yogurt dipping sauce. Low carb and refined-sugar free!
Cinnamon Sugar Delicata Squash
Fall is here! My favorite time of the year! I baked these cinnamon sugar delicata squash “fries” to get the fall kitchen vibes going, and they did not disappoint. Delicata squash benefits: low-carb and packed with fiber, magnesium, and other vitamins. It’s a hot seasonal ingredient right now! And if you haven’t tried a cinnamon squash recipe, you’re in for a treat.

One of the best things about delicata squash is that it can be cooked sweet or savory. I decided to try my hand at a sweet recipe with this version. This recipe is ONLY 4 INGREDIENTS! And if you want to make the maple coconut dipping sauce it’s only an additional 2 (I used Forager plain, original coconut yogurt for the dipping sauce, but you can use any kind you like!)
Preparing Delicata Squash (No Peeling Required!)
You can get delicata squash at any store (Whole Foods, Trader Joe’s, etc.) and it’s very easy to prep! Cut off both ends and then slice it vertically down the middle. Spoon out the seeds and then cut it into horizontal slices all the way down.

Ingredients:
- 1 or 2 Delicata Squash chopped into half moons
- 2 tbsp. Coconut Oil
- 4 tbsp. Coconut Sugar
- 2 1/4 tbsp. Cinnamon Powder
For the Maple Coconut Yogurt Dipping Sauce:
- 1/3 c. Coconut Yogurt I used Foragers plain, original
- 2 tbsp. Maple Syrup
Instructions
Recipe:
- Preheat oven to 400 degrees.
- Line a baking sheet with parchment paper.
- Cut both ends off squash, slice down the middle, and then chop horizontal half moon pieces.
- In a medium bowl, coat all pieces with coconut oil and then toss in cinnamon and sugar.
- Place on baking sheet and bake 30-50 minutes depending on how you like them (less time for chewier, more time for crispier- I find 40 minutes is a good time for me).
- While baking, mix coconut yogurt with maple syrup in a side dish.
- Serve together, best while warm!
