Baked Oat Cups with Cinnamon Streusel

Baked oats made into little muffins with a crunchy cinnamon streusel topping. They only require 6 ingredients and are an easy breakfast or snack!

If you’re a fan of baked oats, you’re going to love these baked oat cups! They are the perfect grab-n-go breakfast or snack and so easy to make! They are flourless and only require about 6 ingredients, all of which I keep on hand in my pantry, and I’m guessing you might too! The ingredients you need are: gluten-free rolled oats, medjool dates, coconut oil, maple syrup, nut milk (I used oat), and cereal. Extra cinnamon powder is optional too!

These baked oat cups are soft & chewy but are topped with a cinnamon streusel that is so crunchy and delicious! I used Catalina Crunch Cinnamon Toast cereal (it’s vegan, low-sugar/diabetic-friendly and grain-free) to make mine, but you can use any kind you’d like.

Baking Tips

Once you bake the oat cups, you will take them out after 7 minutes in the oven and THEN add the streusel to bake for another 3-5 minutes. This way, the steusel doesn’t get over-baked. 

Other than that, this recipe is super simple! These have been my breakfast on repeat this week (warmed up a bit with some nut milk on the side) so I hope you love them as much as I do! You can keep them on your counter at room temperature for up to a week or in the fridge for up to 2 weeks. Enjoy and let me know if you make them!

Baked Oat Cups w/ Streusel

Simple baked oat cups (Gluten-Free, Vegan, and Refined Sugar Free) for a perfect easy breakfast. Made with only 6 ingredients and a crunchy, delicious cinnamon streusel topping.

  • Food Processor


For the Baked Oat Cups:

  • 1 c. Rolled Oats
  • 1/4 c. Oat Milk
  • 2 tbsp. Coconut Oil melted
  • 1 tbsp. Maple Syrup
  • 6 Medjool Dates pitted

For the Streusel Topping:

  • 1/2 c. Cinnamon Cereal crushed
  • 1 tsp. Cinnamon Powder
  • 1 tbsp. Maple Syrup
  • 1 tsp. Coconut Oil melted



  • Preheat oven to 350 degrees.
  • In a food processor, blend all ingredients for the baked oats.
  • Add to a lined muffin tin (makes about 6). Bake for 7 minutes.
  • Meanwhile, mix all ingredients for the streusel.
  • Take out the muffins, layer the streusel on top and bake for another 3-5 more minutes.
  • Let cool and enjoy!
