A great use of leftover almond milk pulp. These vegan, gluten-free, and grain-free brownies are fudgy, rich, and decadent and incredibly easy to make!



Flourless Almond Pulp Brownies

I love brownies. They are one of my favorite desserts. The other day, I made some homemade almond milk using my Ellie’s Nut Milk Bag (the BEST bag for making homemade nut milks – use code “natalieeng” for 10% off), and subsequently, made these flourless brownies using the leftover almond pulp!

Since these brownies are made from almond pulp, they are naturally not only gluten-free, but also grain-free, so perfect if you prefer a Paleo diet and want a Paleo brownie recipe as well! If you don’t have almond pulp on hand, you can sub for almond meal, which is still a Paleo and gluten-free baking ingredient!

The other ingredients I used for these almond pulp brownies were all also plant-based and refined-sugar free. I used whole ingredients like coconut oil, maple syrup, and vegan chocolate chips. You can add in nuts as well if you like a little more crunch.

I prefer to bake these almond pulp brownies on a lower temperature for a little longer to keep them nice and soft. They came out ultra fudgy and rich- just the way I like them! And the best part was dipping them into my homemade almond milk!

Ingredients
  

  • 2 c. Almond Pulp (can sub almond meal)
  • 1 c. Cacao Powder
  • 4 tbsp. Almond Butter
  • 1/2 c. Maple Syrup
  • 2 tbsp. Coconut Oil Melted
  • 4 tbsp. Almond Milk Or any other nut milk
  • 1 tsp. Vanilla Extract
  • Pinch Pink Himalayan Salt
  • 1/2 c. Vegan Chocolate Chips

Instructions
 

Recipe:

  • Preheat oven to 300 degrees.
  • Mix dry ingredients in a large mixing bowl.
  • Mix in wet ingredients and stir well. Then stir in chocolate chips.
  • Layer an 8x11 brownie pan with parchment paper and press mixture into it evenly.
  • Bake for 30-40 minutes, or until desired gooeyness.

Notes

Store in an airtight container in the refrigerator up to 2 weeks.
